An Autumn Treat

One of my favorite treats during this time of year is pumpkin bread—nothing super fancy—just simple, delicious, pumpkin bread.  Sunday was a rainy and cold one.  So, what do you do with your three-year-old?!  You BAKE!  We made loaves for our dear neighbors and made a dozen cupcakes….YUM!  Anything is good when it’s a cupcake!  I think I ate through about 8 cupcakes that day and a loaf on Monday–no joke.  I LOVE IT!  Whether you’re looking for something to keep your kiddos busy this season or need  a gift for your Thanksgiving hosts, nothing beats this recipe!  Simple, quick, and easy.  Recipe below! Pumpkin Bread

3 1/3 c flour
2 tsp baking soda
3 tsp cinnamon
Dash of salt
3 c sugar
1 c vegetable oil
2/3 c water
1 can (15 oz) pumpkin
4 eggs
1 c chopped pecans

Preheat oven to 350 degrees.  Mix first four ingredients.  In a separate bowl, combine sugar and oil.  Mix in the dry ingredients.  Add water, the pumpkin, 4 eggs, and pecans.  Mix and pour into pans.  Makes 3 8- or 9-inch loaves or 6 mini loaves.   Bake 1 hour or until done.  Enjoy!
